Tender halal chicken seared in a hot wok with fresh tomatoes, ginger, green chillies and crushed spices. No pre-made base sauce — every karahi is fired to order, which is why it arrives at your table still bubbling.
Karahi is named after the heavy wok it is cooked in, and that wok is the whole point. We sear halal chicken over high heat, then build the sauce right around it with tomatoes, ginger, garlic, crushed coriander seed, black pepper and green chillies. Nothing is pre-cooked and reheated.
As the tomatoes break down they cling to the chicken instead of thinning out into gravy, giving our karahi its signature thick, glossy, deep-red coat. It is finished with julienned ginger and fresh coriander for a lift of freshness against the heat — the kind of karahi you would get at a roadside dhaba back home.
High heat, fresh tomatoes and no shortcuts. A proper karahi reduces in the pan rather than simmering in a pot, so the spices toast instead of stewing. That is where the smoky, concentrated flavour comes from.

Yes. Foodies Calgary uses 100% halal chicken, and every karahi is cooked to order in our Westwinds kitchen.
It is medium to hot by default with real green-chilli heat. Let us know when you order and we can adjust the spice level to suit you.
Karahi is wok-cooked over high heat with fresh tomatoes so the sauce reduces and clings to the meat. A curry simmers longer in a pot and has a thinner, gravy-like sauce.
We are open Monday and Wednesday through Saturday from 11:00 AM to 11:00 PM, and Sundays from 12:00 PM to 11:00 PM. Closed Tuesdays.
