Malai tikka is the gentle counterpart to a fiery chicken tikka. The marinade is built on cream and cheese rather than chilli, with white pepper, green cardamom, ginger and a little garlic doing the seasoning work — no red colour, no heat, all richness.
That dairy marinade also protects the meat on the grill, which is why malai tikka comes off the skewer noticeably more tender than most grilled chicken. We cook it hot and fast so the outside takes a light char while the inside stays soft and juicy.
Cream and cheese in the marinade tenderise the chicken and shield it from the direct heat of the tandoor. Combined with a short, high-heat cook, that is the whole secret to malai tikka that never dries out.
