Chicken tikka lives or dies on the marinade and the heat. Ours sits in thick yogurt with red chilli, garam masala, ginger-garlic, lemon and mustard oil long enough for the spice to work all the way into the meat rather than just coating it.
It is then threaded onto skewers and grilled hot and fast. The yogurt keeps the boneless pieces moist while the exterior blisters and picks up genuine char — that smoky edge is the whole point, and it is why we grill to order rather than in advance.
A long marinade and a short, hot cook. Rush the first or extend the second and you get dry, one-note chicken. Get both right and you get tikka with a proper crust and a juicy centre.

It is medium — properly spiced with red chilli and garam masala but balanced by the yogurt marinade. Ask for malai tikka instead if you would prefer mild.
Chicken tikka is boneless pieces on skewers; tandoori chicken is cooked on the bone. Both are marinated and grilled, but tikka cooks faster and is easier to share.
