The paratha roll is Pakistan's answer to fast food, and the paratha is what separates a good one from a great one. Ours is cooked to order on the griddle until the layers separate and crisp at the edges while staying soft enough to fold without cracking.
Inside goes chicken tikka straight off the grill, sliced onions, fresh coriander, a squeeze of lemon and our green chutney and garlic sauce. It is wrapped tight so the juices soak into the paratha instead of your hands — portable enough for the LRT ride home from McKnight–Westwinds.
A pre-made wrap steams and goes soggy. A fresh paratha, laminated and griddled to order, holds up to hot filling and sauce. That is why our rolls still taste right twenty minutes after they leave the kitchen.
