The connoisseur's karahi. Bone-in halal mutton cooked down in the wok with tomatoes, ginger, garlic and crushed whole spices until the meat is tender and the sauce is dark, thick and intensely savoury.
Mutton karahi takes longer than chicken and rewards the wait. The meat is cooked on the bone, which releases marrow and collagen into the pan and gives the sauce a body and richness that boneless cuts simply cannot match.
We build the masala around fresh tomatoes, crushed coriander seed, black pepper, green chilli and a generous amount of ginger, reducing it hard so it clings to every piece. Finished with more julienned ginger and fresh coriander — this is the karahi our regulars order when they want the real thing.
Bone-in mutton and a long reduction are non-negotiable. The result is a karahi with a thick, almost sticky sauce and meat that pulls cleanly off the bone — a very different dish from a quick boneless curry.
